We don’t know about you, but after overindulging over the Bank Holiday Bonanza, and with beach holidays just around the corner – we’re starting to look towards light and healthy meals to make sure we’re in ship-shape for the swimwear months ahead.
So we thought we would give you an exclusive sneak peek into Saucy’s recipe book, with a delicious fish recipe which is as tasty as it is healthy. So go on, give it a try – your friend’s and family won’t even realise this is a low calorie option it tastes so good!
Baked salmon with chilli pesto and a crisp green summer salad
What you need
1 pack of Tesco’s skinless boneless salmon fillets
1/2 red chilli, deseeded and finely chopped
1 Tomato, sliced
3 Tablespoons of green pesto
How to make it
Step 1
Preheat oven to 190°C/375°F/Gas Mark 5.
Step 2
Place the fillets in a lightly oiled backing dish. Cover the fillets in the pesto, sprinkle with chilli and layer the sliced tomato on top. This can be prepared in advance and kept in the fridge.
Step 3
Bake in the oven for 20-25 minutes, until the salmon is cooked through.
