Autumnal Food

It’s official, Autumn is now upon us. To make the transition into the colder months that little bit more bearable, why not stock up on some great seasonal vegetables to create some hearty Autumn fish dishes in the kitchen. After all, there’s nothing like fresh veg which is in season – it’s tastier, and costs less!

So this month, opt for green veg like broccoli, courgette and runner beans as well as root vegetables like parsnips, carrots, butternut squash and pumpkin to get the most out of your meals.

Here’s a few quick tips on how to inject some Autumn flavours into your cooking:

  • Top a fresh fillet of salmon with sliced leeks, courgettes, chilli, ginger and a splash of white wine, and bake in a foil parcel.
  • For a great side dish, roast parsnips in olive oil, honey and thyme. Serve with a baked cod fillet.
  • To make an Autumn coleslaw, mix sliced celeriac, carrots, red cabbage and apples with natural yoghurt, mayonnaise and Dijon mustard. The perfect accompaniment to a roasted smoked haddock fillet
